Clay, Dr. Loretta Faith Harris, Yvette Register, and Dr. Wachell McKendrick, these ladies are amazing in their own way. I am honored these ladies shared a window into their world with the world.

Posting interviews with these incredible women (my elite eight) has inspired me to continue YoTrip Presents in the months to come. A Historic Institution Of Higher Learning: Paine College

Paine College Historic District, in Augusta, Georgia, was listed in the National Register of Historic Places on December 26, 2012. Representing one of the few institutions of higher education created by a biracial board of trustees in Georgia for African-American students, Paine College Historic District was found historically important on the state level. Important for its role in education and African American heritage, the event was marked by a statement from Paine College President George C. Bradley, who wrote, “This is a major milestone in the college’s 131 years of existence, and we look forward to making additional milestones and accomplishments in the legacy of Paine College.”….

Founded in 1882 by trustees from the Methodist Episcopal Church, South (MEC-S)and the Colored Methodist Episcopal Church in America (CEMC) with the goal of educating African-American youth, the institution was, from the beginning, a coeducational school.  Paine College continues to serve its original purpose of providing quality education and remains associated with the successor denominations of the founding churches. http://1.usa.gov/X6IUfW

Understanding the Thyroid

January is Thyroid Awareness month. The thyroid is a body part that is small in size but large in its functionality. As a center for how the body operates, the thyroid has the ability to work normally or it can be under active (Hypothyroidism) or overactive (Hyperthyroidism). All month-long there will be post that encourage, educate, enlighten and empower the readers regarding the thyroid.

The thyroid gland is an important endocrine gland that controls the body’s metabolism. It is a small butterfly shaped gland located in the front of the neck just below the Adam’s apple. The thyroid gland produces the hormones tetraiodothyronine (T4) and triiodothyronine (T3).

Together these hormones regulate how your cells use energy. The pathways by which cells use energy is called metabolism. Your body’s general metabolism determines blood pressure, heart rate, and weight.

Hypothyroidism is a condition where your thyroid gland does not make enough thyroid hormone. Low levels of thyroid hormone interfere with the body’s ability to perform normal metabolic functions such as efficient use of energy from food products, regulation of many chemical reactions in the body, and maintenance of healthy cells, bones and muscles, to name a few..

Thursday Thinking by YoTrip for 11/8/12-Happy Pink November (Vol. 11, Iss.2)

Today I was delighted like a kid in the candy store when I turned the corner and came upon this uniquely decorated tree in celebration of breast cancer at Women’s Center for Radiology. The tree was the perfect companion for the women who enter the first waiting room in preparation for going back for their mammogram. One by one as the ladies rounded the corner I saw the light dance in their eyes and a sense of calm entered the room.

So often it is the little things that stop us for a moment to pause and give a silent shout of thanksgiving. Everyday is a day worthy of giving thanks, for Happy Pink November. Keep educating, encouraging, and empowering other with breast cancer awareness.

Congratulations to President Barack Obama on winning the 2012 Presidential Election. Four more years! Let’s unify as a nation.

Keep the people impacted by Hurricane Sandy in your thoughts and prayers.

Soul Food The Fabric of Our Lives

 Soul Food is apart of the fabric of our lives, it connects us together like a well made quilt.  Good food makes its own reputation by leaving an impression on those who partake in the savory goodness. Soul food cooking  has found a way to make its presence known, and remained a staple in the lives of people who grew up eating soul food or were introduced to it sometime in their lives. June is  Soul Food Month.  To gain more knowledge on the history of Soul Food continue reading below. I also included two yummy recipes.

Soul Food is a term used for an ethnic cuisine, food traditionally prepared and eaten by African Americans of the Southern United States. Many of the various dishes and ingredients included in “soul food” are also regional meals and comprise a part of other Southern US cooking, as well. The style of cooking originated during American slavery. African slaves were given only the “leftover” and “undesirable” cuts of meat from their masters (while the white slave owners got the meatiest cuts of ham, roasts, etc.).

We also had only vegetables grown for ourselves. After slavery, many, being poor, could afford only off-cuts of meat, along with offal. Farming, hunting and fishing provided fresh vegetables, fish and wild game, such as possum, rabbit, squirrel and sometimes waterfowl. Africans living in America at the time (and since) more than made do with the food choices we had to work with.  http://www.aaregistry.org/

Here are some great soul food recipe to share…

Oven Fried Chicken Recipe

This Oven Fried Chicken Recipe has a lot of flavor despite it being baked. By dipping the chicken in buttermilk in allows the chicken to achieve some crispiness.

3 lbs of chicken (combination of thighs and drumsticks, skinned)

1 tsp salt

2 cups of Italian Style breadcrumbs

1 tsp of cayenne pepper

2 cups of buttermilk

1/2 tsp of black pepper

2 tablespoons of melted butter

Preheat oven to 375 degrees. In a large dish pour in breadcrumbs, cayenne pepper, black pepper and 1 tsp salt.(Make sure to blend)
In another bowl, pour in buttermilk.

Take chicken and dip into buttermilk and make sure to let any extra buttermilk to drip back into bowl. Roll into seasoned breadcrumbs.
Place chicken onto a roasting pan that has been sprayed with cooking spray. (This allows the chicken to crisp better.)

Take melted butter and drizzle over chicken. Place into oven that has been preheated and cook for about an hour.
*Note: This chicken is even more delicious if you allow it to sit in the buttermilk for a couple of hours.

Baked Macaroni And Cheese Recipe

This baked macaroni and cheese recipe is really decadent. This is my friend Sonya’s recipe she has made on many occasions.It is made with three different kinds of cheeses and the Monterey Jack Jalapeno cheese adds some spiciness.

This makes a large serving you can serve to a big crowd.

4 cans of Campbells cheddar cheese soup

1 ½ pound of casserole macaroni

1 large bag of shredded mild cheddar cheese

1 large bag of shredded sharp cheddar cheese

1 large bag of shredded Monterey Jack Jalapeno cheese

1 large green bell pepper, finely chopped

½ small can of evaporated milk

1 egg

1 tablespoon of flour

1 tsp crushed black pepper

½ teaspoon of kosher salt

Preheat oven to 350 degrees. Lightly grease a large baking dish.

Prepare macaroni according to package directions.

While macaroni is cooking in a large bowl, combine the egg, milk and 1 tablespoon of flour and whisk together.Add to the bowl, the four cans of cheddar cheese soup, the three bags of shredded cheese, and the chopped green bell pepper.

When macaroni is cooked, drain well and place into greased baking dish. Pour cheese mixture over macaroni and stir well until evenly coated. Sprinkle with salt and pepper.

Bake uncovered for 40 minutes or until the top of macaroni is golden brown.

 Today as  we highlight  Stroke Awareness Month, I yield my blog post to my friend and fellow blogger,   Mr.Roger Caldwell. Strokes Can Kill

As we come to the end of stroke awareness month, there is still a crisis with Brown and Black people around the world with hypertension and high blood pressure. There is limited research, educational studies, medical conferences, and funding directed to ascertain the fundamental core reasons why these two cultures have this problem. Many experts believe our lifestyles, our diet, and our economic status in the world contribute to our lack of healthy choices.

In the African American community, 1 out of 2 or 50% of the people in our culture have   hypertension. There are other chronic diseases in our community such as diabetes, cancer, heart disease, obesity, and a myriad of other complications that make our culture the sickest in America.

Every 45 second in America someone has a stroke. Every 3 minutes someone dies of a stroke. Strokes are the second leading cause of death in America, and the number one cause of long-term disability. The reason that I have studied and read up on strokes is because I am a stroke survivor who was devastated and debilitated by a stroke eight years ago.

I spent three days in ICU and when I became conscious, I realized I was paralyzed, I could barely talk, and I could not walk. I spent 7 weeks in the hospital, and when I left, I was in a wheelchair, and my left side was paralyzed. My story is in my book entitled, “The Inspiring Journey of a Stroke Survivor.”

There is nothing magical or mythical about strokes. When you don’t take your blood pressure on a monthly basis, you put yourself at risk as you get older. I believe the key to improving health disparities in the African-American community starts with proper food, diet, and exercise. To move our community forward, we must began to improve our lifestyle by going to the doctor, stop drinking alcohol, stop smoking, stop using illegal drugs, and lower obesity.

Everyone is at risk for a stroke. It does not matter your ethnicity, or how much money you have in the bank. At anytime or age, you can be devastated by a stroke, which would dramatically alter your family and your life. Know your numbers for lowering your blood pressure. Each time you look in the mirror, stroke and blood pressure awareness starts with you.
